According to Cretan food standards and by respecting the olive tree fruit itself, we have created an extra virgin olive oil of the highest quality and produced in the olive groves from the Kolymvari area in the island of Crete, where olive trees are cultivated through years of care and with a high sense of responsibility and respect towards the product. Our careful cultivation and production result in an excellent work of very low acidity.
Our olive tree's fruit is harvested early and traditionally by hand, from October to early December, and is instantly processed (within 12 hours from harvest). Harvest and the production are always completed on a fixed-term basis so that our olive oils keep their freshness.

Our company guarantees our product's acidity and richness in antioxidants, both of which achieved without any chemical processing. Thus, we always comply with all bottling procedures and acidity standards based on Commission Regulation (EEC) No 2568/91.
